For one i would like to say i never use any of the premade formations. The AI know how to counter them easily.
The first thing i do in a battle before deployment is to remove all of my artillery from the front and dump them somewhere to see how much space they take. I then look at my deploy zone and look for the highest OR flattest ground if there aren't any good hills. Then you build your formation around the Artillery Have two line infantry units next to them, make sure though the line infantry is not too high up, or else in might get hit by the canister shot. By having just the two line infantry units next to them, enemy Calvary doesn't tend to charge it. And the line infantry combined with canister shot deals with any infantry easily.

@ jakesloves,you obviously don't play MP much,don't you?
Anyway,as I believe i've already said,I tend to just bring howitzers,put them behind my lines,and start whamming from afar.The only time I've used canister is when cavalry charge my hows or my line breaks and my howitzers are the only allied things breathing on the field?

On defence I usually form great battery with 4-5 6-lber Foot, and than my whole army around it. I try to put them on high ground but more important is that they have nice long clear line of fire, favorably at some angle to enemy line of movement. That gives me flanking fire that devastates enemy infantry when they finaly come. Meantime I try to eliminate their cavalary units which are in range. Because 6-lber Foot are quite accurate very often one good volley from 5 units (that is 15 cannons) destroys or routes targeted unit. Now I have oportunity to move my cavalry wide around that enemy flank so when enemy infatry advances their artillery is easy to destroy by quick charge. Battle almost won because I have my infantry line still intact and supported by great battery and also my cavalry behind enemy line.

There is nothing wrong with placing artillery in the center. I always carry a couple of skirmishers and their stakes, deployed at the beginning of the fight, can keep any cavalry at bay, and my line units + canister take care of the rest.
Usually I place the guns in the middle if they are howitzers (due to their short range) and place them at the edges if they are cannons. (for the raking fire)
